Minced chicken meatballs

Ingredients:
- Minced chicken - 500 g
- Eggs - 1 pc.
- Parmesan cheese
- Baton
- Parsley
- Tomatoes
- Spices

Mix all the ingredients and form meatballs, scald it, after it add 3 tablespoons of water, tomatoes, then jug slightly. May be served with any garnish. If you prefer pasta, you can grate some cheese onto it.

Pilaf "Assorted"

Ingredients:
- Chicken - 2 pieces.
- Rice - 250 g
- Sausage - 100 g
- Ham - 100 g
- Smoked pork loin - 100 g
- Tomatoes - 100 g
- Onions - 50 g
- Stock - 0.5 liters (1 stock cube)
- Vegetable oil - 4 tbsp.
- Butter - 4 tbsp.
- Chopped cilantro - 3 tbsp.
- Saffron - at the tip of a knife
- Salt

Directions:

Cut ham, onion, loin and chicken meat into cubes, slice sausages and fry in a mixture of butter and vegetable oil. Add diced tomatoes, salt, saffron, then add the rice. Pour in the broth, cover and simmer until cooked, without any stirring. Stir the pilaf and add some greens over it before serving.

Roll of legs

- Chicken legs - 4 pcs.
- Carrots - 4 pcs.
- Garlic - 4 cloves
- Mayonnaise - 4 tbsp.
- Parsley - 1 bunch
- Oyster mushrooms - 200 g
- Cheese, coarsely grated - 4 tbsp.
- Ground black pepper
- Salt

Wash legs, dry, remove the bones, put the flesh skin-down down and tenderize so that the skin remains intact. Grate carrots, chop the garlic and parsley. Scald mushrooms, cut into strips. Salt the flesh, cover with garlic at an even layer, spread a part of mayonnaise, pepper, evenly put carrots, cheese, mushrooms, put parsley on the narrow edge of the leg. Roll it all, starting from this side. Tie thread rolls, brush with remaining mayonnaise and bake in oven for 40 minutes until golden brown. Remove the ties when serving, cut rolls into slices. For garnish fits boiled cauliflower and broccoli.

Chicken roast

Ingredients:
- Chicken breast - 400g
- Eggplant - 3 pcs.
- Onion - 3 pcs.
- Bell pepper - 3-4 pcs.
- Lettuce leaves (for decoration)
- Vegetable oil
- Thyme, salt and pepper

Cut chicken breast lengthwise and tenderize slightly. Rub the chicken with salt and pepper and place on a well heated pan and fry for 5-7 minutes. Fry cut into thin strips vegetables in a separate pan in the following order: eggplant (2-3 minutes), onions (3-4 minutes) and bell pepper. Stew it all for about 20 minutes, stirring regularly. When all ingredients are ready, place salad leaves on a plate, lay over fried onions, eggplant, bell pepper, fried chicken.
The dish can be decorated with sprigs of dill and parsley. Mashed potatoes or buckwheat crumbly fit well as a side dish.

Legs in a puff

- Chicken legs - 4 pcs.
- Cheese - 4 slices
- Puff pastry - 500 g
- Seasoning for chicken - 1 tsp.
- Mustard - 1 tsp.
- Honey.
- Salt

Remove the bone from the legs, rub the legs with a mixture of mustard and honey, leave on for 30 minutes. Gently lift the skin and stuff formed pockets with the cheese slices.
Roll puff pastry a 5 mm thick, cut into long narrow strips and wrap the legs tightly. Bake in oven at 200°C until golden brown.
When serving garnish with salad. Decorate with greens.

Chicken in a melon

Ingredients:
- Chicken - 1 kg
- Melon (larger than a chicken) - 1 pcs.
- Dessert wine - 2 tbsp.
- Salt to taste
- Greens

Rinse the chicken and boil in a small amount of salted water with wine over low heat for 30 minutes. Remove the skin, draft the stock.
Wash and dry the melon, cut off the top, remove the pulp with a spoon to fit the chicken. Place the chicken into the melon, pour in the stock, cover with the removed top fixed with wooden skewers, place the melon in a pan. Cook with a small amount of water tightly closed for an hour. Remove the chicken, divide into portions and arrange on a platter.
Serve on rice, decorate with greens.

Quenelles of chicken

Ingredients:
- Cooked chicken - 300 g of flesh
- Rice porridge viscous - 1/2 cup
- Milk - 1 tbsp.
- Butter - 1 tbsp.
- Wheat flour - 1 tsp.
- Sour cream - 300 g
- Processed cheese is soft - 2 tbsp.
- Tomatoes - 2 pcs.
- Dill chopped - 1 tbsp.
- Freshly ground nutmeg
- Salt

Mince the flesh two times with a meat grinder together with the porridge, add salt, milk, butter and beat up until fluffy pulp. Form quenelles of 20-25 g from the pulp, and steam them for 25 minutes.
For the sauce drain flour, mash with sour cream and bring to a boil. Remove from heat, add cheese, nutmeg, salt, dill and mix well. Scald the tomatoes, remove the skin, cut flesh into cubes and combine with the sauce.
Lay cooked quenelles at the center of buttered form, decorate with puree of carrots or potatoes. Bake in the oven at 220 ° C until golden brown.

Chakhokhbili Chicken

- 1 chicken - 1.2 kg (chicken can be replaced by a similar number of thighs)
- Tomatoes - 3 pcs.
- Onions - 2 pcs.
- Cilantro (or parsley) - one batch
- Basil - one batch
- Khmeli suneli - 1 tsp
- Small red pepper 1 pc.
- Salt to taste
- Garlic - 3-4 cloves
- Butter

Cut chicken into small pieces of about equal size, wash, dry with paper towels. Fry in a dry frying pan for 15 minutes, turning constantly, until golden brown. Reduce the heat.
Slit tomatoes skin crosswise, pour over boiling water, dip into cold water and remove the skins. Cut into small cubes, add to chicken. Stew for 10 minutes.
Cut onions into half rings and fry with butter until golden brown.
Add to the pan, stew covered for 30 more minutes. At the end add the finely chopped garlic, herbs, salt and spices, stir and stew for 7 more minutes.
Serve with rice or mashed potatoes.

Chicken liver salad

- Chicken Liver - 200 g
- Carrots - 1-2 pcs.
- Onions - 1 pc.
- Bulgarian pepper - 1 pc.
- Salt
- Pepper

Directions:
Wash, dry and chop the liver.
Cut jnions cut into half rings, slice carrots into strips.
Wash peppers, remove the seed box and cut into half rings.
Fry the liver In the heated vegetable oil in a frying pan for 3-5 minutes.
Add chopped vegetables, salt and pepper and cook until tender for 8-10 minutes stirring occasionally.

Chicken leg stuffed with mushrooms and cabbage

- Cabbage - 60 g
- Ham - 50g
- Cheese - 80 g
- Onions - 1 pc.
- Egg - 1 pc.
- Butter - 4 tbsp.
- Wheat flour - 2 tbsp.
- Salt

Skin the legs in form of "stocking", remove the flesh and chop it well.
To make the stuffing shred cabbage and fry it in butter with finely chopped mushrooms, ham, chicken flesh and onion, chill, then add some grated cheese.
Stuff the leg skin with the mixture, give it the shape of a whole leg, fix with a skewer, cover with a beaten egg, bread with flour and bake in the oven for 20-25 minutes.
Garnish with fresh or pickled vegetables.

Sardelki with honey and sesame seeds

Ingredients:
- Sardelki - 4 pcs.
- Soy sauce - 1 tbsp.
- Liquid honey - 1 tbsp.
- Sesame seeds - 1 tbsp.

Directions:

Mix soy sauce with honey, put the mixture on shpikachki, dredge with sesame seeds. Bake shpikachki under the grill for 6-8 minutes. When serving, cut each into 4 pieces, pick the skewers, put the snack on a plate. Decorate with greens and fresh vegetables.

Chicken in wine

The composition of the dish:

Ingredients:
- Chicken - 1 pc.
- Seed onion - 250 g
- Mushrooms - 250 g
- Bacon - 100 g
- Ground red pepper - 2 tbsp.
- Run butter - 2 tbsp.
- Dried thyme - 1 tsp.
- Garlic - 1 clove
- Dry red wine - 250 ml
- Chicken stock cubes - per 1.5 cup of stock
- Brandy - 3 tbsp.
- Potato starch - 1 tsp.
- Wheat flour - 2 tbsp.
- Salt

Cut the chicken into 6-8 portions. Rub each piece with salt and pepper.Bread it with flour. Fry all sides in hot oil. Put the chicken in another bowl. Cut bacon into small pieces, Peel onions, blanche mushrooms and cut into slices. Stew the onions and mushrooms in melted bacon for 15 minutes. Then put the fried chicken, thyme, wine, and pour 1/2 cup of stock, stew covered on over low heat for 40 minutes, then add the chopped garlic and cook another 15 minutes.
