Chicken Meatballs

The composition of the dish:

Ingredients:

- Minced chicken - 0.5 kg
- Eggs - 2 pcs.
- Garlic - 2 cloves
- Semolina - 2 tbsp.
- Salt and pepper
- Sour cream - 2 cups
- Tomato sauce - 3 tbsp.
- Water ? cups
- Flour or bread crumbs

Mix minced chicken, eggs, minced garlic, and semolina. Season it with salt and pepper. Make balls of a walnut size, roll in flour and fry in vegetable oil.
Mix sour cream, tomato sauce and water, stir, add salt to taste. Pour this mixture onto meatballs and place in oven for half an hour.

Chicken and mushrooms pie

Ingredients:
- Cake wafer - 3-4 pcs.
- Chicken fillet - 800 g
- Mushrooms - 400 g
- Onions - 200 g
- Butter - 200 g
- Cheese - 150 g
- Rich cream - 100 g
- Nutmeg
- Black pepper, salt
- Parsley

Cut chicken fillet into pieces, fry with onion chopped to semi-rings.
Slice mushrooms and saute in butter, add some nutmeg, salt, pepper, cream, mix well with chicken and onion and rub it all in a food processor.
Interlay wafer cakes with the mix, apply a thin layer on top, dredge with grated cheese. Bake in the oven until golden brown. Decorate with greens when serving.

Fennel flavoured chicken liver on skewers

Ingredients:

- Chicken Liver - 400 g
- Olive oil - 70 ml
- Fennel seeds - 1 tbsp.
- Sage leaves - 8 pcs.
- Juice of 1 lemon
- Garlic - 1 clove
- Breadcrumbs - 5 tbsp.
- Salt and white pepper

Directions:

Wash and dry chicken livers. Mix the fennel seeds, lemon zest, sage, garlic and spices in a blender. Add the breadcrumbs.
Season the liver with the mixture and put on skewers, then roll it in breadcrumbs and fry on a hot pan in olive oil until golden brown.
Bring to done in the oven at 200°C if necessary. Sprinkle with lemon juice when serving.

Roll of legs

Ingredients:
- Chicken legs - 4 pcs.
- Carrots - 4 pcs.
- Garlic - 4 cloves
- Mayonnaise - 4 tbsp.
- Parsley - 1 bunch
- Oyster mushrooms - 200 g
- Cheese, coarsely grated - 4 tbsp.
- Ground black pepper
- Salt

Wash legs, dry, remove the bones, put the flesh skin-down down and tenderize so that the skin remains intact. Grate carrots, chop the garlic and parsley. Scald mushrooms, cut into strips. Salt the flesh, cover with garlic at an even layer, spread a part of mayonnaise, pepper, evenly put carrots, cheese, mushrooms, put parsley on the narrow edge of the leg. Roll it all, starting from this side. Tie thread rolls, brush with remaining mayonnaise and bake in oven for 40 minutes until golden brown. Remove the ties when serving, cut rolls into slices. For garnish fits boiled cauliflower and broccoli.

Chicken breast in almond crust

Ingredients:
- Chicken fillet, 4 pcs.
- Potato chips - 100 g
- Almonds, finely chopped - 50 g
- Egg - 1 pc.
- Wheat flour - 2 tbsp.
- Yellow bell pepper - 1 pod
- Tomatoes - 4 pcs.
- Cucumbers - 1 pc.
- Lettuce - 200 g
- Vinegar 3% - 2 tbsp.
- Vegetable oil - 4 tbsp.
- Sugar - 1 tsp.
- Ground black pepper
- Salt

Tenderize the chicken fillet, salt and pepper it.
Crush potato chips and mix with almonds. Beat up the egg.
Bread chicken breasts with flour, dip into the egg, bread with a mixture of almonds and potato chips. Place on parchment covered baking sheet and roast in the oven for 20 minutes.
Cut peppers in halves, remove seeds, cut into strips. Slice tomatoes and cucumbers. Mix vegetables, add finely shredded lettuce.
Mix vinegar with salt, pepper, sugar. Add oil while beating up. Pour the mixture onto the salad.
Garnish the chicken with salad when serving.

Chicken salad with vegetables

The composition of the dish:

Ingredients:
- Fried chicken - 1/2 pc.
- Cauliflower - 100 g
- Green celery - 1/4 of the stem
- Bell pepper - 1/2 pc.
- Carrots - 2 pcs.
- Radishes - 1/2 pc.
- Sour cream - 1/4 cup
- Yogurt - 1/2 cup
- Juice - 1/2 lemon
- Black pepper, salt to taste

Boil cabbage in salted water for 15 minutes, fold in a sieve, cool and disassemble the curds.
Wash and slice celery, bell peppers, carrots and radishes into strips.
Remove the chicken skin, separate the flesh from the bones and cut it into slices. Combine the prepared ingredients, season with salt, pepper and a mixture of sour cream, yogurt and lemon juice. Hold 10 minutes in a cold place.
Sprinkle with chopped herbs when serving.

Legs in a puff

The composition of the dish:

Ingredients:
- Chicken legs - 4 pcs.
- Cheese - 4 slices
- Puff pastry - 500 g
- Seasoning for chicken - 1 tsp.
- Mustard - 1 tsp.
- Honey.
- Salt

Remove the bone from the legs, rub the legs with a mixture of mustard and honey, leave on for 30 minutes. Gently lift the skin and stuff formed pockets with the cheese slices.
Roll puff pastry a 5 mm thick, cut into long narrow strips and wrap the legs tightly. Bake in oven at 200°C until golden brown.
When serving garnish with salad. Decorate with greens.

Rolls of chicken with mushrooms

Ingredients:
- Chicken - 350 g
- Mushrooms - 100 g
- Cheese - 150 g
- Soy sauce (for marinating)
- Spices

Marinate chicken in soy sauce, then cut it in thin plates and tenderize slightly.
Chop mushrooms, grate the cheese.
Put a layer of mushrooms on the fillet, then a layer of cheese and a layer of champignons again.
Wrap the rolls.
Put the rolls on the pre-greased foil.
Bake in oven for 30 minutes.
Open foil and bake for 10 more minutes until golden brown.

Chicken liver salad

The composition of the dish:

Method of cooking:

Ingredients:
- Chicken Liver - 200 g
- Carrots - 1-2 pcs.
- Onions - 1 pc.
- Bulgarian pepper - 1 pc.
- Salt
- Pepper

Directions:
Wash, dry and chop the liver.
Cut jnions cut into half rings, slice carrots into strips.
Wash peppers, remove the seed box and cut into half rings.
Fry the liver In the heated vegetable oil in a frying pan for 3-5 minutes.
Add chopped vegetables, salt and pepper and cook until tender for 8-10 minutes stirring occasionally.

Salad served warm.

Chicken with Honey Sauce

The composition of the dish:

Ingredients:
- Butter - 20 g
- Chicken breast (boneless) - 1 kg
- Onions - 250 g
- Carrots - 3 pcs.
- Zucchini - 1 pc.
- 1 lemon - zest and juice
- 1 orange - zest and juice
- Honey - 4 tbsp.
- Mustard - 3 tbsp.
- Ginger root - 1 tbsp.
- Rice - 250 g
- Salt and pepper

Thoroughly warm up the oven. Fry the breasts in butter. Coarsely chop the carrots, zucchini and onions and saute them in the pan where the chicken was rosted, about 10 minutes. Mix orange juice, lemon zest and mustard, honey, ginger and garlic, salt and pepper to taste. Move the chicken to a pan with vegetables and pour the honey mixture with seasonings. Bring to a boil, then remove from heat and place in oven, cover the top with a lid and stew for 50 - 60 minutes, occasionally basting sauce of honey. Cook rice in 25 - 30 minutes after putting the chicken into the oven.  

Stuffed chicken necks

Ingredients:
- Chicken necks - 1kg
- Chicken liver - 300-500 g
- Flour (or semolina) - 2 tbsp.
- Onions - 1 onion
- Salt, spices - to taste
- Chicken fat (for frying)
- Chicken stock

Rinse chicken necks, gently remove the bones so as to obtain one-piece hollow tube. For the stuffing: in a little chicken fat saute semolina or flour, separately fry chopped onions and chicken livers. Mince liver with a meat grinder or chop finely, mix with flour and onions. Stuff necks wit the resulting meat, sew and cook them in chicken stock over medium heat for 30-40 minutes. Then take the necks off the stock, let the liquid drain and fry them in chicken fat.

Chicken leg stuffed with mushrooms and cabbage

The composition of the dish:

Ingredients:
- Chicken legs - 4 pcs.
- Mushrooms - 400 g
- Cabbage - 60 g
- Ham - 50g
- Cheese - 80 g
- Onions - 1 pc.
- Egg - 1 pc.
- Butter - 4 tbsp.
- Wheat flour - 2 tbsp.
- Salt

Skin the legs in form of "stocking", remove the flesh and chop it well.
To make the stuffing shred cabbage and fry it in butter with finely chopped mushrooms, ham, chicken flesh and onion, chill, then add some grated cheese.
Stuff the leg skin with the mixture, give it the shape of a whole leg, fix with a skewer, cover with a beaten egg, bread with flour and bake in the oven for 20-25 minutes.
Garnish with fresh or pickled vegetables.
