Chicken Meatballs

Ingredients:

- Minced chicken - 0.5 kg
- Eggs - 2 pcs.
- Garlic - 2 cloves
- Semolina - 2 tbsp.
- Salt and pepper
- Sour cream - 2 cups
- Tomato sauce - 3 tbsp.
- Water ? cups
- Flour or bread crumbs

Mix minced chicken, eggs, minced garlic, and semolina. Season it with salt and pepper. Make balls of a walnut size, roll in flour and fry in vegetable oil.
Mix sour cream, tomato sauce and water, stir, add salt to taste. Pour this mixture onto meatballs and place in oven for half an hour.

Chicken and mushrooms pie

Ingredients:
- Cake wafer - 3-4 pcs.
- Chicken fillet - 800 g
- Mushrooms - 400 g
- Onions - 200 g
- Butter - 200 g
- Cheese - 150 g
- Rich cream - 100 g
- Nutmeg
- Black pepper, salt
- Parsley

Cut chicken fillet into pieces, fry with onion chopped to semi-rings.
Slice mushrooms and saute in butter, add some nutmeg, salt, pepper, cream, mix well with chicken and onion and rub it all in a food processor.
Interlay wafer cakes with the mix, apply a thin layer on top, dredge with grated cheese. Bake in the oven until golden brown. Decorate with greens when serving.

Devilled chicken

Ingredients:
- Chicken - 2 pieces.
- Garlic - 4-6 cloves
- Apple cider vinegar or wine vinegar - 3-4 tbsp.
- Run butter - 100 g
- Tomatoes - 2 pcs.
- Cucumbers - 2 pcs.
- Ground red pepper - 1 tsp.
- Coriander - 1 tsp.
- Salt

Directions:

Cut chickens the sternum, spread and slightly repel so as not to crush bones. Then add salt to taste, sprinkle with vinegar and marinate for 1 hour. For seasoning rub the garlic, mix with pepper, coriander and salt, add 1 teaspoon of vinegar. Brush the chicken with this seasoning well inside and out. Roast the chicken with hot oil in a special pan - first from the inside with a press, then from the outside without press. Grilled Chicken

- Red Pepper
- Seasoning for grilling (composition: black pepper, nutmeg, onion, majoram, garlic, juniper)
- Salt
- Vegetable oil


Rub chicken with salt, spices, brush it with a little vegetable oil.
Put on the grill, or strung on a skewer, put down the tray for dripping fat.
Grill the chicken at 200 degrees for about an hour.

Chicken roast

Ingredients:
- Chicken breast - 400g
- Eggplant - 3 pcs.
- Onion - 3 pcs.
- Bell pepper - 3-4 pcs.
- Lettuce leaves (for decoration)
- Vegetable oil
- Thyme, salt and pepper

Cut chicken breast lengthwise and tenderize slightly. Rub the chicken with salt and pepper and place on a well heated pan and fry for 5-7 minutes. Fry cut into thin strips vegetables in a separate pan in the following order: eggplant (2-3 minutes), onions (3-4 minutes) and bell pepper. Stew it all for about 20 minutes, stirring regularly. When all ingredients are ready, place salad leaves on a plate, lay over fried onions, eggplant, bell pepper, fried chicken.
The dish can be decorated with sprigs of dill and parsley. Mashed potatoes or buckwheat crumbly fit well as a side dish.

Chicken soup with zucchini

Ingredients:
- Chicken stock - 5 cups
- Cooked chicken fillet - 200 g
- Zucchini - 1 pc.
- Asparagus - 200 g
- Carrots - 1 pc.
- Onions - 1 pc.
- Vegetable oil - 6 tbsp.
- Celery - 1 pc.
- Black pepper, salt to taste

Cut zucchini, carrots and celery into slices, cut onion, asparagus and fillet into small pieces. Mix onions and carrots, saute it with oil.
Bring broth to boil, add vegetables, salt, pepper, and boil for 25 minutes.
When serving, place slices of fillet on a plate, fill them with soup and sprinkle with chopped herbs.

Chicken salad with pineapple

The composition of the dish:

Ingredients:
- Chicken (cooked meat) - 100 g
- Canned pineapple - 60 g
- Lemon juice - 1 tbsp.
- Mayonnaise - 2 tbsp.
- Sour cream - 2 tbsp.
- Walnuts (kernels) - 20 g
- Parsley and dill - 20 g

Cut the flesh into large cubes, cut pineapple into slices. Place on a platter, alternating pineapple and chicken meat.
Grate walnuts (keep 2 whole cores for decoration). Chop herbs (2 sprigs leave for decoration).
For sauce, mix sour cream, mayonnaise and lemon juice. Serve the salad, water with sauce, sprinkle with grated nuts, herbs and decorate with a whole walnut kernels and sprigs of greenery.

Chicken loin, cooked with vegetables in arm.

Ingredients:
- Chicken loins - 5 pcs.
- Bell pepper - 1 pc.
- Eggplant - 1 pc.
- Onions - 2 pcs.
- Tomato - 2 pcs.
- Garlic - 2 tooth.
- Salt to taste
- Black pepper (to taste)

Marinate loins in a mixture of salt, pepper, spices and onions (30-40min).
Cut the vegetables into strips.
Salt sliced ??eggplant and soak it in water for 10-15 minutes (to get rid of the bitterness), then drain, wash and dry with a towel.
Put loins surrounded by vegetebles in the baking arm.
Bake in the oven for about 40-50 minutes.

Chicken meat balls

- Minced chicken - 500 g
- Onions - 1 pc.
- Butter - 50 g
- Flour - 1 cup
- Eggs - 5 pcs.
- Milk - 1/3 cup
- Salt
- Pepper


Directions:
Add finely chopped onion, 1 egg, salt, pepper into the minced chicken and mix carefully.
Now prepare the batter: beat up 4 eggs with milk, mix with the flour well.
Form the mince cakes, put on every one a piece of butter and form patties.
Now bread patties in flour, dip in batter and fry, remove the chicken meatballs from the pan and put in the oven to bring to readiness.
Chicken meatballs are ready.

Hot chicken sandwiches

Ingredients:
- Boiled white chicken meat (estimated at an average chicken breast for 4 sandwiches)
- 4 slices of white bread
- A few slices of cheese durum
- Vegetable oil
- Salt
- Spices
- Greens

Put bread in a frying pan with a well-heated oil, fry a little on one side. On the unroasted side put chicken, salt, pepper to taste and cover the meat with cheese. Close the pan with a lid and cook over low heat until cheese melts. Place ready-made sandwiches on a plate and decorate each one with sprigs of dill.

Skewer with chicken and pineapple

Ingredients:
- Chicken breast - 3 pcs.
- Soy sauce - 75 ml
- Vinegar - 75 ml
- Honey - 2 tbsp.
- Vegetable oil - 2 tbsp.
- Mushroom - 10 pc.
- Bunching onion
- Bacon - 150 g
- Pineapple

Mix soy sauce, vinegar, honey and vegetable oil in a large bowl. Add medium-chopped chicken breast, mushrooms and chopped green onions to the mixture. Mix it all thoroughly, then put into the fridge for at least 1 hour.
Put chicken pieces on skewers. Alternate with mushrooms and slices of pineapple. Wrap chicken with of bacon strips and secure with a thread. Grill skewers for 15-20 minutes, rotating on a regular basis and pouring marinade from time to time. Serve hot chicken skewers with fresh vegetables and herbs.

Chicken in wine

The composition of the dish:

Ingredients:
- Chicken - 1 pc.
- Seed onion - 250 g
- Mushrooms - 250 g
- Bacon - 100 g
- Ground red pepper - 2 tbsp.
- Run butter - 2 tbsp.
- Dried thyme - 1 tsp.
- Garlic - 1 clove
- Dry red wine - 250 ml
- Chicken stock cubes - per 1.5 cup of stock
- Brandy - 3 tbsp.
- Potato starch - 1 tsp.
- Wheat flour - 2 tbsp.
- Salt

Cut the chicken into 6-8 portions. Rub each piece with salt and pepper.Bread it with flour. Fry all sides in hot oil. Put the chicken in another bowl. Cut bacon into small pieces, Peel onions, blanche mushrooms and cut into slices. Stew the onions and mushrooms in melted bacon for 15 minutes. Then put the fried chicken, thyme, wine, and pour 1/2 cup of stock, stew covered on over low heat for 40 minutes, then add the chopped garlic and cook another 15 minutes. Boil the remaining stock down by half, season with brandy, salt and pepper. Dilute in 2 tablespoons of water, pour in the sauce, stirring occasionally. When serving put the chicken on a plate with onions and mushrooms, pour over sauce.
